Certosino - Italian Christmas Cake
Ingredients
125ml rum
100g raisins
7 dried figs (chopped)
50g candied orange peel (chopped)
100g roasted almonds(chopped)
100g roasted hazel nuts(chopped)
300g dark chocolate
125g unsalted butter
125g flour
75g sugar
100g honey
3 large eggs
1 tsp cinnamon powder
1 tsp baking powder
Method
Soak raisins & chopped fig in rum .
Cover & keep it overnight.

Break the chocolate bar & add 2 tbsp water.
Melt in microwave oven 2 mn.
Add chopped butter & mix well.

In another bowl beat eggs & sugar.
Sieve the flour , cinnamon powder & baking powder together and fold into the cake mixture.
Add chocolate butter mixture & mix well.
Add honey, chopped nuts & soaked raisins & fig.
Mix & pour the batter into the greased cake pan.
Bake for 40 minutes, Th 180°C.
Set aside to cool.
