Crustless Quiche Provençale
Ingredients
2 tbsp olive oil
A bay leaf
2 Thyme branches
5 cloves of garlic(chopped& crushed)
1 tsp paprika
2 onions(sliced)
2 tbsp organic tomato puree
A green chilli cut in rings (optional)
A small zucchini(Julienned)
Half of an eggplant(Julienned)
Half of Red , Yellow & Green bell pepper (Julienned)
1 tsp paprika powder / red chilli powder
Salt to taste
1 tsp herbes de Provence

3 eggs (beaten)
100g thick cream
50g flour
30g corn flour
Freshly ground black pepper
*** Topping**
100 g grated cheese (Emmental)
Method
Heat oil in a pan with bay leaf & thyme branches.
Add chopped garlic & fry for a while.
Then add julienned vegetables, salt, paprika & tomato puree.
Mix well, cover & cook for a while.
Remove frome fire & garnish with herbes de Provence.
Discard bay leaf & thyme braches.

Beat eggs & then add whipped cream & cumin seeds .
Add flour, corn flour & the prepared vegetable mix & stir.
Transfer to a greased lightly floured tart tin.

Pre-heat oven 180°C & bake for 25 mn .
Take out from the oven & scatter grated cheese over it.
Return to the oven & bake for another 2mn.
Serve hot.
Herbes de Provence is the mixture of dried herbs (Oregano+Thyme+ Rosemary).
This spice mixture originated in the Mediterranean coast of France popularly known as "Provence".
