Avocado Almond Cake
Ingredients
1 ripe avocado / butter fruit (mashed)
2 tbsp lemon juice
100g flour
50g almond powder
150g sugar
50g butter(melted)
A pinch of salt
3 eggs
1/2 tsp cinnamon powder
1 tsp baking powder
1 tsp baking soda
1 tbsp rum
Method
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs.
Sieve the flour and baking powder + baking soda together and fold into the cake mixture.
Add mashed avocado, cinnamon powder powder & rum.
Pour the batter into the greased cake pan & top with blueberries.
Bake for 25-30 mn until risen & golden-brown.
Serve with tea.
