Thai Basil Fried Rice
Ingredients
Leftover roasted chicken (shredded)
3 garlic cloves (chopped)
1 red bell pepper (seeded & sliced)
2 onions (chopped)
3 cloves of garlic(chopped)
A green chillies(cut in coins)
1/2 cup water
1 tbsp soya sauce
2 tbsp ketchup
Oil for frying

4 cups cooked Basmati rice / Jasmin rice
Fresh Thai Basil leaves & Coriander Leaves
Method.
Heat oil saucepan & fry chopped garlic.
When light golden brown, add chopped onions along with chillies & bell pepper.
Fry for a while & add water , cover & cook for a while.
Then add soya sauce & ketchup along with basil leaves.
Mix well & then add shredded chicken .
Add cooked rice with the prepared sauce & mix well.
Toss several times with a wooden spatule.
Garnish with freshly chopped coriander leaves & serve.
