Cloud Fritters
Ingredients
10g yeast granules
200ml luke warm water
1 tsp sugar

A carrot (peeled & finely grated)
A slice odf smoked salmon (chopped)
An onion (chopped)
1 green chilli (chopped)
1 tsp chopped ginger
1/2 tsp red chilli powder
2 eggs (beaten)
200g flour
2 springs of curry leaves / coriander leaves (chopped)
Salt to taste

Oil for frying
Method
Dilute yeast in luke warm water along with sugar.
Keep aside for 10mn.
Wash, peel & grate carrots.
Add all the other ingredients in a mixing bowl.
Mix well & keep aside for 30 mn.

Heat oil in a frying pan .
Pour 1 tbsp full of the batter.
Cook both sides of the vada's until golden brown.
Remove using a slotted spoon & drain on a kitchen paper.
U can prepare 4/5 vada's at the same time .
Serve hot with tea or as a starter.
