Spicy Duck Roast
Ingredients
6 duck legs(remove the skin)
1/2 tsp turmeric powder
1 tsp freshly grounded pepper
Salt to taste
*Fine paste*
8 cashews
5 shallots (thinly sliced)
1 tsp fennel seeds
2 cardomom
2 cloves
2 petals of star anise
A piece of cinnamon
A tomato(chopped)
Oil for frying

2 onions (chopped)
2 green chillies(half slit)
1 tsp ginger -garlic paste
1 tbsp coriander powder
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt to taste
Method
Marinate duck in first three ingredients & keep aside.
Dry roast all the spices.
Then add all the powders(coriander+chilli+turmeric) & mix well.
Remove from fire & set aside to cool.
Grind to a fine powder.

Heat oil in sauce pan a fry shalots to golden brown.
Add cashews & all the spices.
At last add chopped tomatoes.
Fry for a while & set aside to cool.
Blend to a fine paste & keep aside.

Heat oil in a pan & fry both sides ofthe marianated duck.
Remove & drain.
In the same pan fry onions till translucent.
Add ginger- garlic paste along with green chilli.
Then add spices & fry .
Stir in tomatoes & fried duck.
Add blended mix along with some water.
Cover & cook .
Garnish with coriander leaves & garam masala .
Serve with rice or any other Indian bread.
