Apricot Cranberry Honey Cake 

Ingredients
6 apricots ( chopped)
2 tbssp cranberries
2 tbsp honey
25g butter
A pinch of cinnamon powder

100g brown sugar
100g butter
3 eggs
140g flour
50g almond powder
1 tsp baking powder
1 tsp baking soda
A pinch of salt
Almond Flakes 
Method
Melt butter & fry chpped apricots.
Then add honey & cramnberry. 
When caramalized, remove from fire
Add a pinch of cinnamon powder & mix .

Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs & mix well. 
Then add almond powder . 
Sieve the flour & baking powder together and fold into the cake mixture.
Pour the batter into the greased cake tin & top with almond flakes 
Bake for 35-40mn & serve with tea.
