Arroz Rojo- Mexican Tomato Rice
Arroz Rojo
Ingredients
3 cups Basmati rice
2 tbsp vegetable oil
3 bay leaves (optional)
3 cloves of garlic
2 onions (chopped)
2 Red bellpeppers(halfslit & deseeded)
1 tsp red chilli powder
1 tsp paprika powder
2 green chillies (half slit)
A big Roman Tomato (chopped)
Coriander leaves

1 chicken stock cube
6 cups water
Method.
Boil water with stock cube & keep aside.
Heat oil in a sauce pan & add bay leaves.
Fry for a while & then add chopped onions & bell pepper.
Then add basmati rice & mix well.
Remove garlic cloves & bell pepper .
Bled them with tomatoes & keep aside .
Add red chilli powder, parika powder n garlic powder & half slit green chillies.
Stir for a while & then add blended tomato mix.
Mix well well & then add half of the boiled water.
Bring to the boil, cover tightly and simmer until the rice is tender.
When the water has been absorbed, add the rest of the water.
When rice is 3/4 cooked remove from fire .
Close the lid tightly. Stir occassionaly with a wooden spatule.
When fully cooked remove from fire.
Toss gently & garnish with coriander leaves.
