Potato- Rice Vada
Ingredients
2 big potatoes (Quartered)
100g rice powder
2 green chillies (chopped)
3 shallots (chopped)
A piece of ginger ( chopped)
1 tsp cumin seeds
An egg (optional)
Salt to taste
Chopped curryleaves / Coriander leaves
Water to make a thick batter
Oil for frying
Method
Boil the quartered potatoes in salted water until tender (20 mn).
Drain & let it cool.
Peel, mash it & keep aside.
Mix other ingredients with water to make a thick batter.
Keep aside for some time.

Heat oil in a frying pan.
Dip your hands in water / oil.
Take a lemon size ball of the the batter & make a hole in the middle.
Deep fry vada's until golden brown.
Remove using a slotted spoon & drain on a kitchen paper.
Serve hot with mint chutney.
