Mascarpone Rum Raisin Loaf

Mascarpone Rum Raisin Cake

Ingredients
150g flour
1 tsp baking powder
1 tsp sodium bicarbonate
150g mascarpone cheese
120g sugar
3 eggs (beaten)
1 tsp vanilla essence
A pinch of salt
2 tbsp rum
200g raisins(corinte)
Method
Soak the raisins in the rum & keep aside.
Sieve the flour, baking powder & bicarb together in a bowl. 
Preheat the oven to 180°C.
Mix mascarpone cheese with sugar. 
Add beaten eggs & mix well. 
Then add half of the flour & mix well. 
Add soaked raisins & vanilla essence. 

Mix well & pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean.(35mn)
Serve with tea.
