Ricotta Coconut Cake
Ingredients
250 g ricotta cheese
150g sugar
75g dessicated coconut
75g almond powder
50g flour
75g butter / 4 tbsp veg oil (melted)
3 eggs (separated)
1/2 tsp vanilla essence
A pinch of salt
1 tsp baking powder
1 tsp baking soda
Coconut milk (optional)
Method
Preheat the oven to 180°C.
Mix ricotta cheese with suagr & vanilla essence.
Then add almond powder & dessicated coconut .
Sieve the flour and baking powder together and fold into the cake mixture.
Add melted butter & mix well.
Beat eggs & add to the cake mixture.
If the batter is thick, add some coconut milk.
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 30 - 35mn.
Serve with tea.
