Courgettes Yogurt Curry
2 courgettes (Zucchini / Italian squash)
3 yogurts (125 g each)
1 tbsp oil.
1 bowl water
1 tsp salt
1/2 tsp turmeric powder
1/2 tsp chilli powder
1 tsp cumin seeds
1 tsp mustard seeds.
1/2 tsp cumin powder
Peel courgettes & cut into small pieces as shown in the photo.
Cut the tomatoes & keep aside.
Mix tumeric powder, chilli powder & salt in a bowl of water.
Heat oil in a pan & add mustard seeds.
When in pops, add courgettes & tomatoes.
Stir for a while. Add cumin seeds & water mixture.
Cook for about 10 min .
Remove from fire & set aside to cool.
Add churned yogurt & stir.
Garnish with cumin powder & curry leaves .
Serve with rice.
