Ukoy - Filipino Snack

Ingredients
250g prawns (fresh)
1/2 tsp chilli powder
1/4 tsp turmeric powder
Salt to taste

1 cup rice flour

Half cup flour
2 cups of moong beans sprout
4 green onions (sliced)
2 shallots(sliced)  
1 green chilli (chopped)
1 clove garlic(chopped)
An egg beaten  
Salt to taste
Coriander leaves (chopped)
Oil for frying
Method
Shell, devein and wash prawns using salt and turmeric.
Mix first 3 ingredients & keep in the refrigerator for an hour.
In a bowl, mix both flours  & salt.
 
Beat an egg with chopped shallots, chilli & ginger.
Then add to the flour & mix well.
Add water if needed.
Then add chopped coriander leaves & marinated shrimps.
Take a spoonfull of batter with two shrimps on the top  & deep fry in a pan or in deep fryer.
When golden brown , turn over & cook the other side.
Remove using a slotted spoon & drain on a kitchen paper.
Serve these spicy Ukoy's as a starter or for tea.
