Sweet Potato Curry
Ingredients
A medim size sweet potato (Egyptian)
2 onions(chopped)
1tbsp oil
1 tsp mustard seeds
1/2 tsp tumeric powder
1/2 tsp red chilli powder
1 tsp salt
1/2 tsp cumin seeds
A bowl of water
Curry leaves
Method
Peel & chop sweet potato in cubes.
Mix themwith tumeric powder, chilli powder & salt.
Heat oil in a pan & add mustard seeds.
When in pops, add chopped onion & fry till it becomes translucent.
Add marinated sweet potato cubes & water.
Cover & cook for a while.
When cooked remove from fire.
Garnish with crushed cumin seeds & curry leaves.
Serve with rice / any type of bread.
