Malabar Spinach Upma
2 cups semolina
3 cups water
2 chillies(half slit)
1 onion (chopped)
A small piece of ginger (chopped)
1 tsp salt
1 tsp urud dal seeds
1/2 tsp mustard seeds
2 tbsp olive oil
A dried chilli
Few tender shoots of malabar spinach (chopped)
Wash & separate leaves & stem of malabar spinach.
Chop them separately & keep aside.
Dry roast semolina in a pan for 8 min and keep aside.
Heat oil in a casserole.
Splutter mustard seeds.
Add urud dal , dried chilli & curry leaves.
Then add chopped onions & fry till light golden brown.
Add ginger,chilli & chopped spinach shoots.
Stir for a while with a wooden spatule.
Add water, salt & bring to the boil.
Close with a lid & cook for 3 mn.
Add the roasted semolina & stir continously.
Keep on low fire & simmer for 2 mn.
Remove from fire & add chopped spinach leaves.
Stir & close tighly with a lid.
Garnish with chopped curry leaves & serve.
