Ruby Red Beetroot Modaks - Happy Ganesh Chathurthi .

Beet Modak

Ingredients
A small beetroot

2 cups rice powder
1 cup luke warm water
50g ghee / butter
A pinch of salt
A pinch of nutmeg powder
For Filling 
2 cups freshly grated coconut / dessicated coconut
21/2 cups sugar
5 tbsp water/ milk
Raisins & cashews
1/2 tsp cardomom powder
Oil/ ghee for frying.
Method
Peel, chop & blend beetroot into a smooth paste .
Mix the other four ingredients with beetroot  & keep aside for an hour.
Gently heat sugar & water to make a syrup.
Add coconut & keep it in medium heat.
When it becomes thick, remove from fire.
Add fried cashews & raisins.
Garnish with cardomom powder & keep aside.

Grease the modak mould.
Take a dough ball, put it it mould & press.
Then fill in a tsp. full of coconut mix & seal it with dough.
Repeat the process with other dough balls.
Steam cook modaks for 15-20 mn.
