Akara - Nigerian Black Eyed Peas Fritters
Ingredients
1 cup black eyed peas (Alasanda)
A stock cube
3 shallots (chopped)
An onion (chopped)
2 green chillies (chopped)
A piece of ginger(chopped)
2 garlic cloves(chopped)
1 tsp cumin seeds
2 springs of curry leaves / coriander leaves ( chopped)
Oil for frying
Method
Soak black eyed peas in water for five hours.
Wash several times & peel the peas
Drain it & leave aside to dry.
Dilute stock cube in half cup water
Blend the peas with stock to get & light & fluffy batter.
Then add chopped onions, curry leaves along with & cumin seeds.
Heat oil in a pan & fry immediately.
Remove using a slotted spoon & drain on a kitchen paper.
Serve hot with tea or as a starter.
