Cheesy Scallion Pancakes
Ingredients
200g flour
2 eggs (beaten)
1 cup chopped scallions
2 green chilles (chopped)
180g grated cheese
Chopped chives
Salt to taste
100ml milk
300ml water
Salt to taste
Seeds for topping (melon, sunflower,sesame,flax)
Method
Mix the both flours in a bowl.
Add water, beaten eggs & stir again (without any lumps).
If the batter is thick, add some more water.
Then add chopped scallions & keep aside for 15mn.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter & top with seeds.
Cover & cook for a while.
Then flip & cook the other side.
Serve hot with a dipping sauce.
