Pineapple Chutney

Pineapple  Chutney

Ingredients
*Dry Roast*
1 tsp coriander seeds
1 tsp fennel seeds
1 dried red chilli
A bay leaf
2 cloves
A small cinnamon stick

1 cup chopped pineapple
A piece of ginger (chopped)
A pinch of salt
1/2 cup water
1 tbsp cashews
1 tbsp raisins
4 tbsp sugar
2 tsp lime juice

Method
Dry roast the spices, blend & keep aside. 
Chop pineapple into small cubes & mix it with salt

Heat a pan & dry roast cashews & raisins.
Then add marinated pineapple along with sugar.
When sugar melts , add half cup water .
Cook on medium heat
When it thickens , add blended spices & mix well;
Atlast  add lime juice & remove from fire. 
Serve this sweet sauce with rice / flat breads / with cheese .
