Khashta Rotti - Punjabi Special

Khashta RottiIngredients  300g flour200g semolina300 ml luke warm milk2 tbsp ghee1 tsp salt1 tsp fennel seeds1 tsp carom (ajwain) seedsOil for fryingMethodMix all the ingredients & keep aside for 3 hours.Make orange sized balls.Take a dough ball & roll out into thin rotti.Heat a non stick pan & cook the rotti.Smear some oil  & press the edges with a wooden spatule. Flip & cook the other side. Repeat the process with other dough balls. Serve with Veg / Non veg Curry.

Ciambella alla ricotta - Italian Ricotta Cake

Ciambella alla ricottaIngredients 250g Ricotta cheese3 eggs300g sugar250g flour2 tsp baking powder1 tsp vanilla essence 2 tbsp almond flakesMethod Preheat the oven to 180°C.Mix ricotta cheese with 150g sugar.Beat the eggs with the remaining sugar.Add beaten eggs to the whipped cheese.Mix flour & baking powder together and fold into the cake mixture.Pour the batter into the greased cake pan. Sprinkle almond flakes on the top & bake for 30 mn.

Chinese Zuchini Pancakes

Zuchini Pancakes Ingredients200g flour2 tbsp corn flourAn Onion (chopped)A green chilli (cut in coins)2 eggs (beaten) 1 Zucchini / Italian squash (cut in thin sticks) 1  stock cube400ml water 1 tbsp sesame oil MethodWash zucchini & cut in thin coins.Then slice them to thin sticks.Mix the stock cube in water.Mix the both flours  in a bowl.
