Spicy Socca - Pancakes of Nice ...

Socca Ingredients250g gram flour 2 eggs (beaten) 1tsp salt 3 tbsp olive oil2 shallots finely choppedA piece of ginger(chopped)1 green chilli( chopped)2 cups of waterChopped curry leavesMethod Mix first four ingredients (without any lumps) in a bowl . Add sufficient water to get a thick pancake mixture. Keep aside for half an hour. Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter & cover with a lid. Mini Radish PuttuIngredients10 mini radish2 cups roasted rice flour1 cup grated coconut 1/2 tsp salt 200 ml hot water Coconut for layering(optional)Chopped curry leavesMethod Blend raddish & coconut & keep aside. Traditional British Crumpets

Crumpets Ingredients300g flour2 eggs (beaten)1tsp salt250ml water125ml luke warm milk5g fresh yeastMethodDilute yeast in luke warm milk. Keep aside for 10mn.Mix first four ingredients (without any lumps) in a bowl .Add milk & stir again. Keep aside for half an hour.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter & wait till bubbles appear.Flip & cook the other side.Eat with the topping of your choice. (Maple Syrup , Honey)British use steel rings to prepare crumpets.

Bourriol - Pancakes of Auvergne

Bourriols    Ingredients50cl luke warm milk 50cl water2 tbsp oil1 tsp sugar 15g fresh yeast 300g flour 200g buckwheat four Salt to taste Method Dilute yeast in luke warm milk with  sugar. Keep aside for 10mn. Mix both the flours. Add milk + water & stir well .(without any lumps). Keep aside for 3 hours. Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. Cook on both sides .   Eat with the topping of your choice. ( Fried Onions, Ham & Cheese )

Mangalore BunIngredientsA banana (mashed)3 tbsp sugar60g curdA pinch of saltA pinch of nutmeg powder6 tbsp flour1/2 tsp baking powderOil for fryingMethodMix first five ingredients & mix well.
