  Fig Fudge / Fig Halwa Ingredients75g jaggery / refined molasses . (15 pieces)2 tbsp water1 soup bowl mashed fresh fig ( 25 figs )2 tbsp flour1/2 tsp cardomom powder 50 g butterRasins & Cashews MethodGently heat jaggery & water to make a thick syrup.Strain it & keep aside. Cantaloupe Custurd Pie

Cantaloupe Custurd Pie Ingredients1 frozen pastry 1 cantaloupe30g custurd powder60 g sugar1/2 l milk 1/2 tsp ground cinnamon1 tbsp confectioners sugar Almonds & sultanas for decoration Method. Wash cantaloupe. Peel, seed, and cut  in chunks.Dilute 30g of custurd powder in cup of milk(without any lumps).Boil  milk. Add 60g sugar. Then add the custurd powder mixture. Stir continously. MalpuriIngredients100g flour25g semolina1 tbsp poppy seeds1 tbsp curd1/2 tsp baking powder3 cardomom pods (1/2 tsp cardomom powder)100 g sugar150 ml wateroil for fryingMethodMix the first five ingredients & keep aside.Make a thick syrup using sugar & water. Cool it.Add this cold syrup to the flour mixture.Add cardomom powder & mix well. Keep aside for half an hour. Sauce (yaourt et mangue)

Rice noodles / String hoppers

  Idiyappam / Noolputtu (Kerala speciality)Ingredients200 g rice powder250 ml water ( I took 125 coconut milk + 125 water)30 g butterShredded coconutsalt to taste.   Method Boil water. Kannan Pathiri - Malabar Muslim Special

Kannan Pathiri Ingredients 500 g flour 250 ml water 1 tsp salt oil for frying Method Mix first three ingredients & knead well. Cover the bowl with a damp cloth & keep aside for an hour. Take a lemon sized ball & flatten it using a roller. Spread 1 tsp oil on the flattenened disc. Transform the disc into a square.(as in fig) Then take the four corners &  join in the middle.  Soft Chulcha Paratha Ingredients400g flour100g semolina1 tsp salt100 ml milk200 ml luke warm water1 onion  (chopped)1 green chilli (chopped)chopped curry leaves20g fresh yeast or (2 tsp dried yeast )1 tsp sugarMethodDilute yeast in warm water with 1 tsp sugar .
